Ingredients:
6 large green apples, chopped
1 cup golden raisins
2/3 cup apple juice
2 tablespoons sugar
2 teaspoons cinnamon
1/8 teaspoon allspice

Directions:
1) Combine apples, raisins, juice, sugar, cinnamon, and allspice in a medium pot; cook over medium heat until apples are tender, about 20 minutes.
2) Remove from heat; mash apples gently with a fork or potato masher. Allow to cool for 30 minutes.

Ingredients:
1 pound chicken liver
½ pound skinless, boneless chicken breasts
1 small onion, halved
2 eggs
¼ cup half-and-half
¼ cup chicken broth
1 teaspoon salt
½ teaspoon nutmeg
1 cup shredded apple
Bread or crackers, for serving
Directions:
1) Preheat oven to 350°F. Lightly grease an inch loaf pan.
2) Place chicken liver, breasts, and onion in a food processor; puree until coarsely ground. Add eggs, half-and-half, broth, salt, and nutmeg; puree until well blended. Stir in the apple.
3) Transfer chicken mixture to prepared loaf pan. Cover tightly and bake 75 minutes. Allow to cool 1 hour at room temperature; transfer to refrigerator and chill 2 hours. Unmold onto a serving platter and serve with bread or crackers.
German Apple Pancake recipe
This traditional German Apple Pancake combines the sweetness of fresh apples with a hearty, doughy pancake for a perfect breakfast treat. Serve the dense pancake with fresh-squeezed lemon and powdered sugar for a breakfast treat that is bursting with the flavor of fresh apples.
Ingredients:
For the Pancake
4 eggs
½ cup all-purpose flower
½ teaspoon baking powder
1 tablespoon sugar
1 c. milk
1 tsp vanilla extract
2 Tbsp unsalted butter, melted
½ tsp ground nutmeg
Pinch of salt
For the Apple Filling
¼ c. unsalted butter
½ c. white sugar (divided)
½ tsp ground cinnamon
½ tsp ground nutmeg
1 large tart apple (such as Granny Smith or other tart baking apples.
Directions:
Peel, core, and slice the apple. Set aside.
In a large mixing bowl, combine eggs, flour, baking soda, sugar, and salt. Slowly mix in milk, stirring constantly. Gradually stir in melted butter, vanilla, and nutmeg.
Place batter in the refrigerator for 30 minutes, or overnight.
When you are ready to make the German Apple pancake, preheat the oven to 425 degrees F (220 degrees C), and remove the batter from the refrigerator.
Melt butter in a 10” ovenproof skillet. Brush butter up on the sides of the pan, coating it completely. In a small bowl, combine ¼ cup of sugar, cinnamon, and nutmeg. Sprinkle sugar and spices into the buttered skillet. Line the bottom of the pan with sliced apples, and sprinkle sugar over the apples.
Slide pancake onto serving platter, and cut into wedges. Garnish with powdered sugar.
