Ingredients:
2 Chicken breasts.
1 Orange (Rind).
1 Garlic clove.
1 Glass of white wine
Fresh ginger.
A handful of cashew nuts.
Some mushrooms.
Directions:
Remove the chicken and place it in a casserole dish.
Fry the mushrooms in the pan with fresh crushed garlic and the cashew nuts, add 1 glass of white wine, and pour this over the chicken.
Bake the chicken for 20 minutes.
Best served with creamed potatoes, rice, or pasta and a salad.
Orange Cake recipe
Add warm orange marmalade on top, let cool, and serve.
Ingredients:
100g butter.
Juice of 2 oranges and grated peel (not the bitter white part).
100g grated almonds.
250g flour.
9g baking powder.
2 egg whites, beaten until foamy.
1/2 tsp salt.
Directions:
Mix all ingredients slowly, eggs last, fill the mass in a buttered baking form, then bake in 375F preheated oven for 45 min.
Orange Carrots recipe
Ingredients:
1 x orange(sliced).
6 x carrots.
1 teaspoon of honey.
½ teaspoon of salt.
dash of pepper.
2 teaspoons of potato starch.
Directions:
Dice the carrots and place them in a pan, just covering them with water.
Add the orange, honey, salt, and pepper to the pan and bring to a boil.
Cover the pan and simmer over a low heat for about 20 minutes, until tender.
Remove the lid and turn the heat to medium, and boil down for about 5 minutes. Watch to make sure the fluid does not boil away.
In a cup, mix the potato starch with a tablespoon of cold water, and stir slowly into the carrots until the gravy thickens.
Orange Chicken recipe
Ingredients:
3 1/2 lb of roasting chicken, jointed.
8 fl oz of orange juice.
2 oz of margarine, melted.
Rind of two oranges, grated.
Rind of two lemons, grated.
3 tablespoons of honey.
1 1/2 teaspoons of salt.
1 teaspoon of dry mustard.
2 tablespoons of lemon juice.
1 tablespoon of water
3 teaspoons of cornflour.
Directions:
Combine the grated rinds, mustard, honey, and salt. Spread the mixture on the chicken. Then cover and let stand for about thirty minutes.
Preheat the oven to 160F.
Pour half of the margarine into a baking dish and add the chicken (skin side up), in a single layer.
Pour the orange and lemon juices over the chicken, then spoon over the remaining half of the margarine.
Bake for about 45 minutes, occasionally basting.
Turn the chicken over and bake for another 30 minutes.
Turn it skin-side up again and bake for another 15 minutes until cooked through and browned.
Strain the juices from the baking dish into a small saucepan and skim off the excess fat. Combine the cornflour and water, add to the saucepan, and bring to the boil, stirring constantly. Simmer gently over a low heat.
Pour the sauce over the chicken, then pour the honey on top.
